Pretty perfect popsicles
Pineapple, rockmelon and kiwifruit popsicles
For a real fresh fruit sensation. Great for kids.
Makes 8-10
- 1/2 medium pineapple, cored, chopped
- 1 medium rockmelon, chopped
- 3 kiwifruit, peeled, chopped
- 1 lime, juice, zest
- 1 tbsp caster sugar (optional)
Puree all ingredients. Pour into containers. Add popsicle sticks (can be secured with a peg). Freeze overnight. Leave out of fridge for a minute to remove from containers.
Salted caramel and chocolate popsicles
These are not so healthy but oh so yummy
Makes about 8
- 100g brown sugar
- 100g caster sugar
- 100g unsalted butter
- 1 tsp sea salt
- 300ml double cream
- 400g coconut milk
- 200g dark chocolate
To make the salted caramel, melt the two sugars at low heat, stirring. Then add the butter a little at a time to incorporate. Add the salt and cream. Bring to boil if not combining well, stirring constantly. Next add the coconut milk. Remove from heat. Melt the chocolate over low heat and add to the caramel mixture. Mix well. If a little too thick, extra water can be added. Pour into containers add popsicle sticks and freeze overnight. Leave out of fridge for a minute to unmould.
Champagne popsicles with peach, basil and grapes
Great for a party.
Makes about 12
- 1 bottle sparkling wine
- 2 tbsp caster sugar
- 3 peaches, skin off, pureed
- 1 small bunch red seedless grapes
- 1 bunch basil leaves
Combine champagne and sugar. Simmer for about 30 minutes. Remove from heat and add the peach puree. In each container, add a few halved grapes and a shredded basil leaf. Pour over the peach and champagne mixture. Freeze overnight with popsicle sticks. Leave out of fridge for a minute to unmould.
Watermelon, raspberry, strawberry and gin popsicles
One for the big kids.
Makes about 10
- 200g seedless watermelon
- 200g frozen or fresh raspberries
- 250g strawberries
- 2 tbsp gin
- 1 tbsp caster sugar (optional)
Puree all ingredients. Pour into containers. Freeze overnight with popsicle sticks. To unmould, leave out of fridge for a minute.
Watermelon daiquiri popsicles
Makes 6-8
- 2 cups chopped seedless watermelon
- 2 tbsp lime juice
- 1/4 cup icing sugar
- 1/3 cup white rum
Place all the ingredients into a blender and puree. Pour into popsicle moulds and freeze overnight.
Avocado, peanut butter, almond milk and honey popsicles
And for something completely different, try this combo.
Makes about 10
- 3 ripe avocados
- 1 tbsp crunchy peanut butter
- 500ml almond milk
- 4 tbsp good-quality runny honey
Puree all ingredients together. Pour into containers. Add popsicle sticks and freeze overnight. To unmould, leave out of fridge for a minute.
