Michael Waldock, Sweetlips Fish & Chips.

Our business is quintessentially Western Australian because . . .

We have prided ourselves, from a very early stage, in selling the highest-quality fresh WA fish in our fish-and-chip range. In recent years we have expanded this philosophy to try to encompass as many food products as possible from WA.

Our top three locally sourced ingredients are . . .

Local fresh-fish varieties, such as bluespot emperor, goldband snapper, Shark Bay whiting and pink snapper. Seasonally, we sell king prawns sourced from locations such as Exmouth and Shark Bay. We use local salads, cheese and some meat products from Mt Barker. So it’s hard to stop at three.

Our biggest challenge is . . .

Educating the public as to the point of difference between selling fresh local product as opposed to imported, especially as nearly all the local seafood is more expensive. Sometimes buyers think they are comparing apples with apples when they are not.

People love our . . .

In-store fresh fish and seafood products display. With WA fish fillets clearly displayed, customers can select and enjoy their fish and chips made with the quality local produce. Our fried fetta is a favourite, too, and the great locations are a bonus: Leederville, which is close to the city; Fremantle, close to Bathers Beach; and Scarborough, the perfect spot to pick up fish and chips on the way to the beach for sunset.
